1cupsmilk (any kind is fine)(it helps if this isn’t straight-from-the-fridge cold)
1cupGreek yogurt(ditto on temperature!)
1egg
2tsppure vanilla extract
1.5cupsstrawberries or any berry of your choosing
Instructions
Preheat oven to 350 degrees F. Grease an 8x8 baking dish.
Mix oats, baking powder, baking soda, and salt in a bowl.
Whisk the milk and melted coconut oil, then add the Greek yogurt, eggs, vanilla and maple syrup or honey. Whisk until thoroughly combined. It’s okay if your coconut oil solidifies into little chunks – it’ll melt again in the oven.
Spread fruit across the bottom of the prepared dish.
Sprinkle dry ingredients evenly over fruit, then pour the wet mix over the top. No need to mix!
Bake for 30-40 minutes, until oatmeal is brown on the top and the top springs back slightly if you touch it lightly.
Let cool a bit before serving. Store leftovers/meal-prepped dish in the refrigerator. Serve cold or reheat!
Recipe Notes
Note: If making gluten-free, just make sure your oats are gluten-free! Most are, as long as there's no contamination.
