What can I say… these berries got me on a strawberry-baking kick! This time, we’re talking breakfast. This is a meal-prep win: protein and fiber-filled to keep you going ’till lunch, no refined sugar, and can easily be gluten free. This strawberry oatmeal bake is a little sweet and a little savory — perfect for whatever breakfast mood you’re in.
Make it for your next brunch crowd, or make it Sunday for yourself and eat this throughout the week — it’s delicious warm or cold. My favorite way to reheat is in the skillet, where it crisps up again on the outside while the inside stays nice and moist. Who says meal prep should focus on lunch and dinner?
Try it with a little yogurt on the side for additional protein! Or if you’re fully embracing its sweet side, maple syrup is my go-to.
Strawberry Oatmeal Bake
Ingredients
- 2 cups old-fashioned oats
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp sea salt
- 1/2 cup maple syrup or honey
- 2 coconut oil melted, or butter works too
- 1 cups milk (any kind is fine) (it helps if this isn’t straight-from-the-fridge cold)
- 1 cup Greek yogurt (ditto on temperature!)
- 1 egg
- 2 tsp pure vanilla extract
- 1.5 cups strawberries or any berry of your choosing
Instructions

Preheat oven to 350 degrees F. Grease an 8x8 baking dish.

Mix oats, baking powder, baking soda, and salt in a bowl.

Whisk the milk and melted coconut oil, then add the Greek yogurt, eggs, vanilla and maple syrup or honey. Whisk until thoroughly combined. It’s okay if your coconut oil solidifies into little chunks – it’ll melt again in the oven.

Spread fruit across the bottom of the prepared dish.

Sprinkle dry ingredients evenly over fruit, then pour the wet mix over the top. No need to mix!

Bake for 30-40 minutes, until oatmeal is brown on the top and the top springs back slightly if you touch it lightly.

Let cool a bit before serving. Store leftovers/meal-prepped dish in the refrigerator. Serve cold or reheat!

Note: If making gluten-free, just make sure your oats are gluten-free! Most are, as long as there's no contamination.
